  • Coriander seeds ¾ cup
  • Desi ghee 3 tablespoons + 1 teaspoon
  • Chopped almonds 3 to 4 tablespoons
  • Chopped cashews 3 to 4 tablespoons
  • Melon seeds 2 tablespoons
  • Chironji 2 tablespoons
  • Broken puffed lotus seeds (makhana) ½ cup
  • Grated dried coconut ½ cup
  • Powdered sugar ½ cup
  • Green cardamom powder ½ teaspoon

Methods

1. Dry roast the coriander seeds

Heat a non-stick pan over medium heat. Add the coriander seeds and dry roast them for about 2 to 3 minutes. Transfer them to a plate and let them cool completely.

2. Roast the nuts and seeds

Heat 2 tablespoons of desi ghee in the same pan. Add the chopped almonds, chopped cashews, melon seeds and chironji. Sauté for about 2 minutes, then transfer the mixture to a large bowl and allow it to cool.

3. Roast the makhana

Add 1 tablespoon of desi ghee to the same pan. Add the broken puffed lotus seeds, also known as makhana or fox nuts. Sauté over medium heat for 2 to 3 minutes. Transfer them to the bowl and let them cool.

4. Roast the dried coconut

Dry roast the grated dried coconut in the same pan over medium heat for 2 to 3 minutes. Keep it aside to cool.

5. Grind the coriander seeds

Once completely cool, transfer the roasted coriander seeds to a grinder jar. Grind them into a fine powder. This roasted coriander base gives Dhaniya Panjiri its characteristic aroma and flavour.

6. Roast the coriander powder

Heat the remaining desi ghee in the same pan. Add the freshly ground coriander seed powder and sauté for 1 to 2 minutes. Transfer it to the same bowl and allow it to cool completely.

7. Combine the ingredients

Add powdered sugar and green cardamom powder to the cooled mixture. Mix everything thoroughly so that the coriander powder, nuts, seeds, makhana and coconut are evenly distributed.
