Traditional Atta Pinni

Ingredients

  • 2 cups whole wheat Atta
  • 1 Cup Sooji
  • 1 cup Desi ghee (clarified butter)
  • 1 cup jaggery (grated) or powdered sugar
  • 1 cup almonds (blanched and chopped)
  • 1/2 cup cashews (chopped)
  • 1/2 cup raisins
  • 1/2 cup desiccated coconut
  • 1/2 cup khoya (optional, for added richness)
  • 1/2 teaspoon cardamom powder
  • Sunflower seeds
  • A pinch of nutmeg powder (optional)

Methods

Roasting the Flour

Take a pan and heat some desi ghee. Add atta and sooji to the ghee and roast it on medium heat, Keep stirring to prevent the flour from burning. Wait for the golden brown colour and nutty aroma. Let it sit aside.

Preparing the Nuts and Khoya

Take another pan and once again add ghee. Now add the chopped dry fruits and roast them. Add khoya to the pan and roast it until it blends well with dry fruits Add coconut and roast for another 2 minutes.

Combining Ingredients

Combine the contents of both the pans and mix them well. Add jaggery or sugar to the mixture for sweetness. Fir added flavours, you can add nutmeg powder and cardamon powder. Mix well.

Shaping the Pinni

While the mixture is warm, make small laddoos (pinni). If the mixture is not binding properly then add some more ghee. Let the pinni set. Store them in an airtight container. Keep at room temperature or refrigerate.

Tips for Making Perfect Pinni

To get the best flavour, you must roast the flour properly. Add the perfect amount of ghee and sugar to create balance. Store the pinni in an airtight container.
