Ingredients
- 1 liter full-fat milk
- 1/2 cup sugar
- 1/4 teaspoon cardamom powder
- A pinch of Kesar
- 2 tablespoons chopped nuts (almonds, pistachios)
- 1 tablespoon chironji (optional)
- 1 teaspoon rose water (optional)
Methods
Step 1 Boil the Milk
In a heavy-bottomed pan, bring the milk to a boil. Reduce the heat to low and simmer, stirring frequently to prevent it from sticking to the bottom.
Step 2 Reduce the Milk
Continue to simmer the milk until it reduces to half its original volume. This will take about 45 minutes to an hour. Stir often to avoid burning.
Step 3 Add Flavorings
Once the milk has thickened, add sugar, cardamom powder, and saffron strands. Mix well and cook for another 5-10 minutes until the sugar dissolves completely.
Step 4 Add Nuts
Stir in the chopped nuts and chironji, if using. Cook for another 2-3 minutes.
Step 5 Cool and Serve
Remove from heat and let it cool. Add rose water if desired. Serve warm or chilled, garnished with additional nuts.
