Chhole Bhature Recipe

Ingredients
- 1 cup dried chickpeas (chana), soaked overnight for Chhole
- 2 large onions, finely chopped for Chhole
- 2 tomatoes, pureed for Chhole
- 1-inch ginger, grated for Chhole
- 3-4 garlic cloves, minced for Chhole
- 2 green chilies, chopped for Chhole
- 2 tbsp oil for Chhole
- 1 tsp Jeera for Chhole
- 1 tsp Dhania powder for Chhole
- 1 tsp Jeera powder for Chhole
- 1 tsp Haldi powder for Chhole
- 1 tsp garam masala for Chhole
- 1 tsp red chili powder for Chhole
- 2 tsp chole masala for Chhole
- Salt to taste for Chhole
- Fresh coriander leaves for garnish for Chhole
- 2 cups all-purpose flour (maida) for Bhature
- 1/2 cup semolina (sooji) for Bhature
- 1/2 cup yogurt for Bhature
- 1 tsp sugar for Bhature
- 1 tsp salt for Bhature
- 1/2 tsp baking powder for Bhature
- Water (as needed) for Bhature
- Oil for deep frying for Bhature
Methods
Step 1 for Chhole
Pressure cook the soaked chhole with salt and enough water until they are tender (about 15-20 minutes).
Step 2 for Chhole
Take a pan and heat the oil, add Jeera and let them splutter.
Step 3 for Chhole
Add chopped onions and sauté until golden brown.
Step 4 for Chhole
Add ginger, garlic, and green chilies, sauté for another minute.
Step 5 for Chhole
Stir in the tomato puree and cook until the oil separates.
Step 6 for Chhole
Add all the dry spices: coriander powder, cumin powder, turmeric, red chili powder, chole masala, and salt. Cook for 2-3 minutes.
Step 7 for Chhole
Add the cooked chickpeas and some of the cooking water. Mix well and simmer for 10-15 minutes.
Step 8 for Chhole
Garnish with fresh coriander leaves.

Take a large bowl, mix flour, semolina, sugar, salt, and baking powder.

Add yogurt and mix. Gradually add water to form a soft dough.

Knead the dough well, cover with a damp cloth, and let it rest for 1-2 hours.
Step 4 for Bhature
Divide the dough into small balls and roll each ball into a circle.

Heat oil in a deep frying pan. Fry the bhature one at a time until they puff up and turn golden brown.
