Homemade Aloo Samosa

Ingredients

  • 2 cups Maida for Dough
  • 1/4 cup Sunflower oil or ghee for Dough
  • 1/2 teaspoon salt for Dough
  • 1/2 cup water (adjust as needed) for Dough
  • 3 large potatoes, boiled and diced for the Filling
  • 1/2 cup peas (fresh or frozen) for the Filling
  • 1 onion, finely chopped for the Filling
  • 2 green chilies, finely chopped for the Filling
  • 1 teaspoon Ajwain seeds for the Filling
  • 1 teaspoon mustard seeds for the Filling
  • 1 teaspoon garam masala for the Filling
  • 1 teaspoon Dhaniya powder for the Filling
  • 1 teaspoon Jeera for the Filling
  • 1/2 teaspoon turmeric powder for the Filling
  • 1/2 teaspoon red chili powder for the Filling
  • 2 tablespoons oil for the Filling
  • Salt to taste for the Filling
  • Fresh coriander leaves, chopped (optional) for the Filling
  • Sunflower oil and Desi Ghee for Frying

Methods

Step 1

Take a large mixing bowl and add flour and salt. Mix it well by adding some sunflower oil and desi ghee. Now add some water until you get a smooth but firm dough. Cover the dough with a damp cloth and leave for fermentation.

Step 2

Take a pan, add oil, and let it heat. Add Jeera and Rai. let them splutter. Now add chopped onions along with green chillies. The next step is to add some peas and saute until they become tender. Take the boiled and diced potatoes and add them to the pan, mix well with the peas and onion. Now is the time to add all the spices and mix until everything is blended well. Cook the mixture well until you are convinced that every ingredient is mixed. Once it's cooked, let it reach room temperature.

Step 3

Divide your dough into equal-sized balls, as per the number of samosas you want to cook. Now roll each ball and make little cones. Now hold the cones and fill them with aloo mixture. Seal the edges. Prepare all the raw samosas in the same manner.

Step 4

Heat some Sunflower oil on medium heat. It should be hot enough but not smoking hot. Now slide two to three samosas and fry them properly. Each batch should take at least 6-8 minutes to cook properly. The ideal color is golden brown.

Step 5

Serve your hot samosas with a delicious mint chutney and hot chai.
