Ingredients
- Sooji: 1 cup
- Water: 2 ½ cups
- Bail Kolhu oil or Desi Ghee: 2 tablespoons
- Mustard seeds: 1 teaspoon
- Cumin seeds: 1 teaspoon
- Urad dal (split black gram): 1 teaspoon
- Chana dal (split Bengal gram): 1 teaspoon
- Cashew nuts: 10-12 (optional)
- Green chilies: 2, slit lengthwise
- Ginger: 1 teaspoon, finely chopped
- Curry leaves: 8-10
- Onion: 1 medium, finely chopped
- Carrot: 1 small, finely chopped
- Green peas: ¼ cup
- Tomato: 1 small, finely chopped
- Salt to taste
- Sugar: 1 teaspoon (optional)
- Lemon juice: 1 tablespoon
- Fresh coriander leaves: 2 tablespoons, chopped
Methods
Step 1
Take a dry pan, add Sooji and roast it on a medium heat. Heat it until it turns golden brown. Make sure you keep stirring to avoid burning. Set it aside when it starts releasing a nutty aroma.
Step 2
Take the same pan and heat a little Bail Kolhu Oil or Desi Ghee. Add mustard seeds and let them splutter. Now add your dals and fry them until they turn golden brown. Add some cashews.
Step 3
Now, take all the veggies and saute them for a few minutes. Cook them until they turn tender.
Step 4
Take a pan and add some water to boil. Add salt and sugar once the water starts boiling. Now add your roasted Sooji and stir continuously to avoid lumps. Lower the heat and stir continuously to cook it well and reach the perfect consistency.
Step 5
Add some lemon juice and mix it well. Now garnish will some fresh Dhaniya leaves and serve with with fresh coconut chutney.
