Ingredients
- 1 cup all-purpose flour (maida)
- ½ tsp baking soda
- 1 tsp baking powder
- ½ tsp cinnamon powder
- ¼ tsp nutmeg powder
- ¼ tsp ginger powder (optional)
- ½ cup butter (room temperature)
- ½ cup brown sugar
- 1 tsp vanilla extract
- ¼ cup milk (room temperature)
- 2 tbsp sunflower seeds
- ½ cup chopped nuts (almonds, walnuts)
- A pinch of salt
Methods
Step 1:
Preheat the oven to 180°C (350°F). Grease and line a 9-inch round or loaf cake tin with parchment paper.
Step 2
If you’re soaking the dried fruits, combine them with orange juice or rum in a bowl and let them sit overnight or for at least 2 hours. Drain the fruits before use but save the liquid for later.
Step 3
In a bowl, sift together flour, baking powder, baking soda, cinnamon powder, nutmeg powder, ginger powder, and a pinch of salt.
Step 4
In a large bowl, cream the butter and brown sugar until fluffy. Gradually add baking Soda with vinegar or eggs (optional), beating well after each addition. Stir in vanilla extract. Add the dry ingredients in batches, alternating with milk. Mix gently until combined.
Step 5

Step 6
Pour the batter into the prepared cake tin and smooth the top. Sprinkle a few sunflower seeds on top for added crunch and decoration. Bake in the preheated oven for 50 minutes or until a toothpick inserted into the centre comes out clean.
Step 7
Allow the cake to cool in the tin for 10 minutes, then transfer it to a wire rack to cool completely.
