Ingredients
- 2 cups Atta (Whole wheat flour) for the Dough
- 1/4 tsp turmeric powder for the Dough
- 2 tbsp Sunflower oil or ghee for the Dough
- Water (as needed) for the Dough
- 1 cup chana dal (split Bengal gram) for the filling (Puran)
- 1 cup jaggery (grated) for the filling (Puran)
- Cardamom for the filling (Puran)
- Saunf for the filling (Puran)
- A pinch of nutmeg powder (optional) for the filling (Puran)
Methods
Step 1 Prepare the dough
Take a bowl and mix Nourish Atta with Haldi and Ghee. Add water slowly and keep kneading to make a soft dough. Cover it and let it rest for 30 minutes.
Step 2 Prepare the filling
Take chana dal and cook it in the pressure cooker until they are soft enough. Drain extra water. Now mash the cooked dal and put it in a pan on medium heat. Add jaggery and keep stirring to make the mixture thick. Add cardamom and mix it well. Wait till it's cool.
Step 3 Assemble the Puran Poli
Once the dough is set, divide it into equal-sized balls. Similarly, divide the filling into equal parts. Roll the dough balls into equal-sized flat circles. Put a spoonful of filling on the rolled dough. Gather the edges and seal them, making a ball. Roll again gently, ensuring the filling doesn’t come out.
Step 4 Cook the Puran Poli
Take a tawa and put it on medium heat. Place the rolled dough on the tawa. Cook it until it turns golden brown on both sides. Apply ghee on both sides. Repeat the process with every puran poli.
