Ingredients

  • 1 cup vermicelli (seviyan)
  • 2 tablespoons ghee (clarified butter)
  • 3 cups milk
  • 1/2 cup sugar
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons chopped nuts (almonds, cashews, pistachios)
  • 1 tablespoon raisins
  • A few strands of saffron (optional)

Methods

Step 1 Roast Vermicelli

Take a pan and heat some ghee on medium heat. Add vermicelli and roast it until it turns golden brown.

Step 2 Boil Milk

Take a separate pot and add milk. Bring it to boil. Once it boils, let it sit on simmer for a couple of minutes.

Step 3 Combine Vermicelli and Milk

Now add roasted vermicelli to the milk and cook it for 15 minutes, until the milk thickens.

Step 4 Sweeten

Add sugar and cardamom in the mixture and cook for another 5 minutes until the sugar dissolves completely.

Step 5 Garnish

Add chopped dryfruits and kesar. Mix it all well. Cook for 2 more minutes and let it sit aside.
