Ingredients
- 1 cup basmati rice
- 2 tbsp oil or ghee
- 1 bay leaf
- 2-3 Laung
- 1-2 Jaivtri
- 1 tsp Saunf
- 2-3 green cardamom pods
- 1-inch cinnamon stick
- 1 tsp Jeera
- 1 large onion, thinly sliced
- 1 tbsp ginger-garlic paste
- 1 cup mixed vegetables (carrots, peas, beans, potatoes), chopped
- 1 green chili, slit (optional)
- 1/4 tsp Haldi
- 1/2 tsp garam masala
- Salt to taste
- 2 cups water
- Fresh coriander leaves, chopped (for garnish)
Methods
Step 1 Rinse the rice
Take basmati rice and soak them in water for atleast 20 minutes. Once soaked, drain the water and set aside.
Step 2 Sauté the spices
Take a heavy pot and put some ghee or oil. Add all the whole spices and saute for some minutes.
Step 3 Cook the onions and paste
Add onion when you can smell the aroma of whole spices. Then add ginger-garlic paste and saute the mix.
Step 4 Add vegetables and spices
Add mix veggies to the mix and saute it for 4 to 5 minutes. Add powdered spices like haldi, garam masala and salt.
Step 5 Combine rice and water
Now add your soaked rice to the mix and blend it well. Then add 2 cups of water and bring it to a boil.
Step 6 Cook the pulao
Let the mixture sit on a simmer for 20 minutes. Make sure the lid of the pot is tight-fitting. Do not lift the lid during this time.
Step 7 Fluff and garnish
Once the pulao is ready, turn of the burner and let your veg pulao rest for 5 minutes.
